Ingredients

  • 500 grams Bottle gourd (loki)
  • 1 large Onion
  • 2 medium Tomato
  • 1 tablespoon Ginger-garlic paste
  • 1 medium Green chili
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Garam masala
  • 1 teaspoon or to taste Salt
  • 2 tablespoons Oil
  • 2 tablespoons (chopped) Fresh coriander leaves
  • 1 cup Water

Directions

Step 1

Wash, peel, and dice the bottle gourd (loki) into small cubes. Set aside.

Step 2

Finely chop the onion, tomatoes, and green chili.

Step 3

Heat oil in a large pan or saucepan over medium heat.

Step 4

Add cumin seeds and mustard seeds. Allow them to crackle for about 30 seconds to release their aroma.

Step 5

Add the chopped onion to the pan and sauté until it turns translucent, about 3-4 minutes.

Add ginger-garlic paste and green chili, and cook for another 1-2 minutes until the raw smell disappears.

Step 7

Stir in the chopped tomatoes and cook until they turn soft and mushy, about 4-5 minutes.

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well to combine all the ingredients.

Add the diced bottle gourd to the pan and mix everything together to coat the bottle gourd with the spice mixture.

Pour in the water and stir well. Cover the pan with a lid and let the bottle gourd cook on medium-low heat for about 15-20 minutes, or until it is tender. Stir occasionally and add more water if needed.
