Ingredients

  • 2 racks Pork spare ribs
  • 1 cup Brown sugar
  • 2 tablespoons Paprika
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 teaspoon Cayenne pepper
  • 1 tablespoon Salt
  • 2 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Apple juice
  • 1 cup Barbecue sauce
  • 2 cups Hickory or applewood smoking chips

Directions

Step 1

Preheat your smoker to 225°F (107°C) and soak the hickory or applewood smoking chips in water for at least 30 minutes.

Step 2

Remove the membrane from the back of the ribs using a knife and paper towel for grip.

Step 3

In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper to create the dry rub.

Step 4

Brush both sides of the ribs with olive oil to help the rub stick, then evenly coat the ribs with the dry rub, massaging it into the meat.

Step 5

Place the ribs directly onto the smoker grates with the bones facing down. Add the soaked smoking chips to the smoker box or directly onto the coals.

Step 6

Smoke the ribs at 225°F (107°C) for 3 hours, keeping an eye on the temperature to maintain consistency.

Step 7

After 3 hours, remove the ribs from the smoker and wrap them tightly in aluminum foil with a splash of apple juice to keep them moist.

Step 8

Return the wrapped ribs to the smoker and cook for an additional 2 hours.

Step 9

Unwrap the ribs and brush them generously with barbecue sauce, then place them back in the smoker uncovered for 1 more hour to allow the sauce to caramelize.

Step 10

Once done, remove the ribs from the smoker and let them rest for 10 minutes before slicing and serving. Enjoy Logan's Smoked Ribs with extra barbecue sauce on the side!
