Ingredients

  • 24 cookies Chocolate sandwich cookies (e.g., Oreos)
  • 6 tablespoons Unsalted butter, melted
  • 1 cup Peanut butter, smooth
  • 8 ounces Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1.5 cups Heavy whipping cream, cold
  • 2 cups Vanilla ice cream, softened
  • 0.5 cup Chocolate fudge sauce
  • 0.25 cup Chopped roasted peanuts
  • 0 Whipped cream (optional, for garnish)

Directions

Step 1

In a food processor, pulse the chocolate sandwich cookies into fine crumbs. If you don't have a food processor, place the cookies in a resealable plastic bag and crush them with a rolling pin.

Step 2

In a bowl, mix the cookie crumbs with the melted butter until evenly combined. Press the mixture into the bottom and sides of a 9-inch springform pan or pie dish to form the crust. Place the crust in the freezer for at least 15 minutes to set.

Step 3

In a large mixing bowl, beat the peanut butter and cream cheese together until smooth. Add the powdered sugar and vanilla extract, and continue mixing until fully combined.

Step 4

In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.

Step 5

Spread half of the peanut butter filling over the chilled crust. Add a layer of softened vanilla ice cream over the peanut butter filling, and spread evenly.

Step 6

Top the ice cream layer with the remaining peanut butter filling, smoothing it with a spatula.

Step 7

Drizzle the chocolate fudge sauce over the top of the pie, allowing it to drip down the sides for a decorative effect. Sprinkle chopped roasted peanuts over the fudge sauce as garnish.

Step 8

Freeze the pie for at least 4 hours, or until firm.

Step 9

Before serving, let the pie sit at room temperature for 5–10 minutes to make slicing easier. Serve with additional whipped cream, if desired.
