Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter
  • 4 cups powdered sugar
  • 1.5 cups semi-sweet chocolate chips
  • 0.5 cups heavy cream
  • 30 pieces chocolate wafer cookies

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease two 9x13-inch cake pans. Line the bottom with parchment paper for easy removal.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until thoroughly combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat with a hand mixer or stand mixer on medium speed for 2-3 minutes until smooth.

Step 4

Gradually stir in the boiling water. The batter will be thin; this is normal.

Step 5

Divide the batter evenly between the prepared pans and bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Step 6

Remove the cakes from the oven and allow them to cool completely in the pans on a wire rack before turning out.

Step 7

While the cake cools, prepare the frosting. In a medium saucepan over low heat, melt the butter and chocolate chips together, stirring frequently. Once smooth, remove from heat and stir in the heavy cream until silky.

Step 8

Let the frosting cool to room temperature, then mix in the powdered sugar gradually, beating until thick and spreadable.

Step 9

To assemble, place one cake layer on a serving platter. Spread a generous amount of frosting over the top.

Step 10

Place the second cake layer on top. Frost the entire cake evenly, including the sides.

Step 11

Using the chocolate wafer cookies, create the “log cabin” design by pressing them into the frosting, starting with the edges and layering into a structured pattern to resemble wooden logs.

Step 12

If desired, pipe extra frosting to create details such as windows or a roof shape. Chill the cake for at least 30 minutes to allow everything to set.

Step 13

Slice and serve your Log Cabin Chocolate Cake. Enjoy!
