Ingredients

  • 2 pounds Lobster (live or pre-cooked)

  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon Sugar
  • 1 teaspoon Cornstarch (mixed with 2 tablespoons of water to create a slurry)
  • 2 tablespoons Vegetable oil
  • 1 cup Water or chicken stock
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Prepare the lobster: If using live lobster, dispatch it humanely and cut it into manageable pieces (tail, claws, and body). If using pre-cooked lobster, cut the cooked meat into chunks and set aside.

Rinse the fermented black beans under cold water to remove excess salt. Pat them dry and mash them with the back of a spoon to create a paste.

In a small bowl, mix together the soy sauce, oyster sauce, Shaoxing wine, sugar, and black pepper. Set aside.

Heat the vegetable oil in a large wok or skillet over medium-high heat.
