Ingredients

  • 8 oz Cooked lobster meat or crab meat (chunked)
  • 2 tbsp Unsalted butter
  • 1 small Shallot (finely minced)
  • 1 tbsp All-purpose flour
  • 0.25 cup Dry sherry
  • 0.5 cup Heavy cream
  • 2 Egg yolks (beaten)
  • 0.25 tsp Salt
  • 0.125 tsp Cayenne pepper
  • 0.25 tsp Paprika (for garnish)
  • 2 servings Toast points or puff pastry shells

Directions

Step 1

In a medium skillet, melt the butter over medium heat.

Step 2

Add the minced shallot to the skillet and sauté until softened and translucent, about 2-3 minutes.

Step 3

Sprinkle the flour evenly over the shallot and butter mixture. Cook for 1 minute, stirring constantly, to form a roux.

Step 4

Slowly whisk in the dry sherry, allowing it to incorporate and cook for 1-2 minutes.

Step 5

Gradually whisk in the heavy cream, stirring frequently, until the mixture is smooth and starts to thicken, about 3-4 minutes.

Step 6

In a small bowl, temper the beaten egg yolks by adding a few spoonfuls of the hot cream sauce to the yolks while whisking continuously.

Step 7

Once tempered, add the egg yolk mixture back into the skillet, whisking to combine. Reduce the heat to low and cook for 2-3 minutes, but do not let the sauce boil.

Step 8

Add the cooked lobster or crab meat to the skillet and gently fold it into the sauce. Heat until warmed through, about 2-3 minutes.

Step 9

Season the mixture with salt and cayenne pepper to taste.

Step 10

Serve the Lobster or Crab Newburg immediately over toast points or in puff pastry shells. Garnish with a sprinkle of paprika for a final touch of elegance.
