Ingredients

  • 1 lb lobster meat (cooked, chopped)
  • 3 tbsp unsalted butter
  • 1.5 cups heavy cream
  • 3 large egg yolks
  • 1 tbsp dry sherry
  • 1 tbsp cognac or brandy
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp ground white pepper
  • 1 pinch nutmeg
  • 4 toast points or puff pastry shells (for serving)

Directions

Step 1

In a medium saucepan, melt the butter over medium-low heat.

Step 2

Add the cooked lobster meat and gently sauté for 2-3 minutes. Remove the lobster from the pan and set aside.

Step 3

In a small bowl, whisk together the heavy cream and egg yolks until smooth and well combined.

Step 4

Slowly pour the cream and egg mixture into the saucepan while stirring constantly to avoid curdling. Cook over low heat until the mixture thickens slightly, about 3-4 minutes.

Step 5

Stir in the sherry, cognac, paprika, salt, white pepper, and nutmeg. Cook for another minute to allow the flavors to blend.

Step 6

Return the lobster meat to the pan and gently fold it into the sauce. Cook for 2-3 more minutes, ensuring the lobster is warmed through.

Step 7

Remove from heat and serve immediately over toast points, puff pastry shells, or rice for an elegant presentation.
