  • 2 medium russet potatoes

  • 1 teaspoon paprika

  • 0.5 teaspoon black pepper
  • 4 pcs eggs (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the lobster tails and cook for 6-8 minutes until the shells are bright red and the meat is opaque. Remove the lobster tails and let them cool. Once cool, remove the meat from the shells and chop it into bite-sized pieces. Set aside.

Step 2

Peel and dice the russet potatoes into 1/2-inch cubes. Bring the same pot of water to a boil, add the potato cubes, and cook for 5-6 minutes until slightly tender but not fully cooked. Drain and pat the potatoes dry with a clean towel.
