Ingredients

  • 1 cup Cooked lobster meat
  • 2 tablespoons Salted butter
  • 1 tablespoon Mayonnaise
  • 4 pieces Sourdough bread slices
  • 1 cup Gruyère cheese
  • 1 cup Cheddar cheese
  • 1 tablespoon Chives (optional, finely chopped)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium-sized bowl, combine the cooked lobster meat, mayonnaise, salt, black pepper, and chopped chives (if using). Mix gently to coat the lobster evenly and set aside.

Step 2

Spread a thin layer of butter on one side of each slice of sourdough bread. These will be the outer sides of the sandwich during grilling.

Step 3

On the unbuttered side of two bread slices, layer 1/4 cup of Gruyère cheese and 1/4 cup of Cheddar cheese. Spread half of the lobster mixture evenly on top of the cheese layers.

Step 4

Add another 1/4 cup each of Gruyère and Cheddar cheese on top of the lobster mixture. Place the remaining slices of bread on top, buttered side facing out.

Step 5

Preheat a large skillet or griddle over medium-low heat. Once hot, carefully place the sandwiches in the skillet.

Step 6

Cook the sandwiches for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crispy, and the cheese is melted and gooey.
