Ingredients

  • 1 cup Cooked lobster meat
  • 1 small White onion, finely chopped
  • 1 stalk Celery, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 2 tablespoons Tomato paste
  • 2 cups Low-sodium chicken broth
  • 1 cup Unsweetened almond milk
  • 1 cup Dry white wine (optional for Phase 2)
  • 1 teaspoon Paprika
  • 0.25 teaspoon Cayenne pepper
  • 1 piece Bay leaf
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and celery, and sauté for 4-5 minutes until softened.

Step 2

Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

Step 3

Stir in the tomato paste, paprika, and cayenne pepper, and cook for 1-2 minutes to enhance the flavors.

Step 4

Pour in the chicken broth and optional white wine. Add the bay leaf, salt, and black pepper. Bring the mixture to a gentle simmer.

Step 5

Reduce the heat to low, cover, and let the mixture simmer for 15 minutes to allow the flavors to meld.

Step 6

Remove the bay leaf and use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the mixture to a regular blender in batches and blend until smooth.

Step 7

Return the pot to the stove and stir in the unsweetened almond milk and the cooked lobster meat. Simmer for an additional 5 minutes to heat the lobster through.

Step 8

Taste and adjust seasoning with additional salt or black pepper, if needed.

Step 9

Serve hot, garnished with chopped parsley. Enjoy your South Beach Diet-friendly lobster bisque!
