Ingredients

  • 1.5 lbs Baby potatoes (Yukon Gold or red)
  • 3 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 tsp Garlic powder
  • 1 cup Shredded cheddar cheese
  • 4 slices Cooked bacon, crumbled
  • 2 stalks Scallions, chopped
  • 0.5 cup Sour cream (optional, for serving)
  • 1 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Step 2

Place the baby potatoes in a large pot and fill with enough water to cover them. Add a pinch of salt and bring to a boil over medium-high heat. Cook the potatoes for 15-20 minutes, or until fork-tender.

Drain the potatoes and let them cool for 5 minutes. Transfer them to the prepared baking sheet, spacing them evenly.
