Ingredients

  • 3 large Russet potatoes
  • 2 tablespoons Unsalted butter
  • 3 tablespoons Milk
  • 1 cup Shredded cheddar cheese
  • 1 cup Cooked bacon, chopped
  • 2 tablespoons Green onions, finely chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup All-purpose flour
  • 2 large Eggs, beaten
  • 2 cups Breadcrumbs
  • 4 cups Vegetable oil, for frying

Directions

Step 1

Peel and dice the potatoes into 1-inch chunks. Place them in a large pot of cold, salted water and bring to a boil. Cook until tender, about 15 minutes. Drain well.

Step 2

In a large mixing bowl, mash the cooked potatoes until smooth. Stir in butter and milk until creamy.

Fold in shredded cheddar cheese, chopped bacon, green onions, salt, and black pepper. Mix well to combine. Let the mixture cool for 5-10 minutes so it is easier to handle.

Using your hands, shape the potato mixture into bite-sized croquettes, approximately 2 inches long. Place them on a baking sheet lined with parchment paper.
