  • 4 pounds Russet potatoes
  • 2 teaspoons Salt
  • 0.5 cup Unsalted butter
  • 1 cup Whole milk
  • 1 cup Sour cream
  • 2 cups Cheddar cheese
  • 1 cup Bacon
  • 4 tablespoons Green onions
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks. Rinse the potatoes under cold water to remove excess starch.

Step 2

Place the potatoes in a large pot and cover them with water. Add 1 teaspoon of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce the heat to medium-low and simmer until the potatoes are fork-tender, about 15-20 minutes.

While the potatoes are cooking, cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess fat. Crumble into small pieces.
