Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 cups Shredded cheddar cheese
  • 6 slices Cooked bacon, crumbled
  • 1 cup Sour cream
  • 4 stalks Green onions, sliced
  • 0.5 teaspoons Garlic powder
  • 0.25 cup Heavy cream
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean and pat them dry. Prick each potato a few times with a fork, then rub them with olive oil and sprinkle with salt.

Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until the skins are crispy and the insides are fully tender. Allow them to cool enough to handle, about 10 minutes.

Reduce the oven temperature to 375°F (190°C).

Slice each potato in half lengthwise and carefully scoop out most of the flesh, leaving about a 1/4-inch layer in the skins. Set the potato flesh aside in a bowl and place the skins on a greased baking sheet.

Mash the scooped-out potato flesh with the heavy cream, melted butter, garlic powder, 1/2 cup of shredded cheddar cheese, half of the crumbled bacon, and a pinch of salt and pepper.

Arrange the potato skins in a greased 9x13-inch casserole dish. Fill each skin with the mashed potato mixture and top them with the remaining shredded cheddar cheese and crumbled bacon.
