Ingredients

  • 1 pound pizza dough
  • 2 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 cup sour cream
  • 0.25 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices bacon
  • 2 stalks green onions
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 0.5 cup milk

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and peel the russet potatoes, then slice them into thin rounds approximately 1/8 inch thick.

Step 3

Toss the potato slices in a bowl with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Spread the slices in a single layer on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly crispy. Set aside to cool.

Step 4

While the potatoes roast, cook the bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate to drain and crumble the bacon once cooled.

Step 5

Prepare the sauce by melting 2 tablespoons of butter in a small saucepan over medium heat. Whisk in 1 tablespoon of flour and cook for 1-2 minutes. Gradually whisk in the milk until smooth and cook for another 2-3 minutes until the sauce thickens slightly. Remove from heat and stir in the sour cream, ranch dressing, remaining salt, garlic powder, and a pinch of pepper. Set aside.

Step 6

Increase the oven temperature to 450°F (230°C). Lightly grease a pizza pan or baking sheet with the remaining olive oil and stretch the pizza dough to fit the pan.

Step 7

Spread the prepared sauce evenly over the pizza dough, leaving a small border around the edges.

Step 8

Layer the roasted potato slices on top of the sauce, followed by the shredded cheddar cheese and mozzarella cheese.

Step 9

Sprinkle the crumbled bacon evenly over the pizza.

Step 10

Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly and melted.

Step 11

Remove the pizza from the oven and garnish with sliced green onions.

Step 12

Let the pizza cool for 2-3 minutes before slicing and serving. Enjoy!
