  • 500 grams Beef brisket
  • 6 cups Water
  • 2 pieces Star anise
  • 30 grams Ginger
  • 4 pieces Garlic cloves
  • 4 tablespoons Soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon Rock sugar (or granulated sugar)
  • 1 medium-sized Daikon radish
  • 2 medium-sized Carrot
  • 2 stalks Green onion
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 2 tablespoons Cilantro (optional, for garnish)

Directions

Step 1

Prepare the ingredients: Slice the ginger into thick pieces, peel and halve the garlic cloves, peel and cube the daikon radish and carrots into bite-sized pieces, and chop the green onions into 2-inch sections.

Step 2

Rinse the beef brisket under cold water and pat dry. Slice it into large chunks approximately 1.5 inches wide.

Step 3

Blanch the beef: Bring a pot of water to a boil. Add the beef brisket and blanch for 2-3 minutes to remove impurities. Drain and rinse the beef with cold water. Set aside.

Step 4

In a large soup pot, add the blanched beef, water, star anise, ginger slices, garlic cloves, soy sauce, Shaoxing wine, and rock sugar. Stir gently to mix the flavors.

Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 1 hour. Skim any foam or impurities that rise to the surface during this time.
