Ingredients

  • 8 oz Lo Mein noodles
  • 12 oz Pork tenderloin
  • 3 tbsp Soy sauce
  • 2 tsp Cornstarch
  • 2 tbsp Vegetable oil
  • 3 Garlic cloves, minced
  • 1 Carrot, julienned
  • 1 Red bell pepper, thinly sliced
  • 1 cup Snow peas
  • 3 Green onions, sliced
  • 1 cup Creamy peanut butter
  • 3 tbsp Hoison sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Chili garlic sauce
  • 0.5 cup Water
  • 0.5 tsp Salt
  • 2 tbsp Toasted peanuts, chopped (optional for garnish)

Directions

Step 1

Cook the Lo Mein noodles according to the package instructions. Drain and set aside.

Step 2

Cut the pork tenderloin into thin strips. In a medium bowl, toss the pork with 1 tablespoon of soy sauce and the cornstarch. Let it marinate for 10 minutes.

Step 3

Prepare the peanut sauce by whisking together peanut butter, 2 tablespoons soy sauce, hoisin sauce, rice vinegar, chili garlic sauce, and water in a small bowl until smooth. Set aside.
