Ingredients

  • 16 oz Lo Mein noodles
  • 1 lb Ground beef
  • 2 tbsp Vegetable oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 large Red bell pepper, diced
  • 1 medium Carrot, julienned or grated
  • 3 tbsp Soy sauce
  • 2 tbsp Hoisin sauce
  • 1 tbsp Chili powder
  • 2 tsp Ground cumin
  • 2 tbsp Tomato paste
  • 1 cup Chicken or vegetable broth
  • 3 stalks Green onions, sliced
  • 1 tsp Sesame oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the Lo Mein noodles according to the package instructions. Drain and set aside.

Step 2

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Step 3

Add the ground beef and cook until browned, breaking it up with a wooden spoon. Once cooked, remove the beef from the skillet and set aside, leaving the drippings in the pan.

Step 4

Add the diced onion, minced garlic, red bell pepper, and carrot to the skillet. Sauté for about 5 minutes, or until the vegetables are softened.

Step 5

Stir in the soy sauce, hoisin sauce, chili powder, ground cumin, and tomato paste. Mix well to coat the vegetables.

Step 6

Return the cooked ground beef to the skillet, then add the chicken or vegetable broth. Stir and let the mixture simmer for 10 minutes, allowing the flavors to meld together.

Step 7

Add the cooked Lo Mein noodles to the skillet and toss to coat them in the sauce evenly. Cook for an additional 2-3 minutes, ensuring the noodles are heated through.

Step 8

Drizzle the sesame oil over the top, and season with salt and black pepper to taste.

Step 9

Garnish the dish with sliced green onions and serve immediately.
