Ingredients

  • 3 cups Cooked shredded chicken
  • 2 cups Cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • 8 medium Flour tortillas
  • 1 cup Sour cream
  • 2 4-ounce cans Green chiles (diced, canned)
  • 2 cups Chicken broth
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 2 tablespoons Green onions, sliced (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly, to form a roux.

Step 3

Slowly whisk in the chicken broth, continuing to whisk until the mixture is smooth and thickened, about 3-4 minutes.

Step 4

Stir in the sour cream, diced green chiles, cumin, chili powder, garlic powder, and onion powder. Remove from heat and set the sauce aside.
