Ingredients

  • 1.5 cups rolled oats
  • 1.25 cups vegetable broth
  • 1 medium carrot, finely grated
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 0.5 teaspoons ground black pepper
  • 0.5 teaspoons paprika
  • 0.5 teaspoons ground cumin
  • 0.5 cup flour (all-purpose or whole wheat)
  • 3 tablespoons olive oil (for frying)

Directions

Step 1

In a medium-sized mixing bowl, combine the rolled oats and vegetable broth. Let the mixture sit for 10 minutes to allow the oats to absorb the liquid and soften.

Step 2

Add the grated carrot, chopped onion, minced garlic, soy sauce, black pepper, paprika, and ground cumin to the bowl with the oats. Mix well to evenly distribute the ingredients.

Step 3

Gradually add the flour to the mixture, stirring to combine. The mixture should come together into a slightly sticky but moldable consistency. Add a little more flour if needed.

Step 4

Using clean hands, form the mixture into small patties, about 3 inches in diameter and 1/2 inch thick. Place them on a plate or tray as you go.

Step 5

Heat the olive oil in a large nonstick skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet, cooking in batches if needed to avoid crowding.

Step 6

Cook the patties for 3–4 minutes on each side, or until golden brown and crisp on the outside. Adjust the heat as necessary to prevent burning.

Step 7

Transfer the cooked patties to a plate lined with paper towels to absorb excess oil.

Step 8

Serve warm with your favorite dipping sauce, a side salad, or as a filling for veggie burgers.
