  • 2 cups shredded carrots
  • 1 cup shredded apple (peeled and cored)
  • 0.5 cup unsweetened shredded coconut
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts (or pecans)
  • 3 None eggs
  • 0.67 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 0.33 cup unsweetened applesauce

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, cinnamon, ginger, and salt until well combined.

Fold in the shredded carrots, shredded apple, shredded coconut, raisins, and chopped walnuts. Mix until the dry ingredients coat these additions evenly.
