Ingredients

  • 2 pounds Yukon Gold potatoes
  • 6 slices Thick-cut bacon
  • 1 medium Yellow onion
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Dijon mustard
  • 0.5 cup Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash the Yukon Gold potatoes thoroughly and place them in a large pot. Cover with water and add a pinch of salt. Bring the water to a boil, then reduce to a simmer and cook the potatoes for 10 to 15 minutes or until fork-tender.

Step 2

While the potatoes are cooking, place the sliced bacon in a skillet over medium heat. Cook until crisp, about 8 minutes, turning occasionally. Remove the bacon from the skillet and set it aside on a paper towel-lined plate to drain. Reserve about 2 tablespoons of the bacon grease in the skillet.

In the same skillet with the reserved bacon grease, add the diced onion and sauté over medium heat for 3–5 minutes until softened and translucent.

Once the potatoes are cooked, drain them and allow them to cool for a few minutes. Peel the potatoes if desired, then slice them into 1/4-inch thick rounds or bite-sized pieces.
