Ingredients

  • 4 large russet potatoes
  • 3 tablespoons butter
  • 1 medium (chopped) onion
  • 4 cloves (minced) garlic
  • 4 cups chicken or vegetable broth
  • 2 cups milk
  • 0.5 cup heavy cream
  • 1.5 cups (shredded) cheddar cheese
  • 6 (cooked and crumbled) bacon strips
  • 2 (chopped) green onions
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon (adjust to taste) black pepper

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Set aside in a bowl of cold water to prevent browning.

Step 2

In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 3

Pour in the chicken or vegetable broth and bring to a boil. Drain the diced potatoes and carefully add them to the pot. Reduce the heat to medium-low and let the potatoes simmer until tender, approximately 15-20 minutes.

Step 4

Using an immersion blender, carefully puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender, blend, and return it to the pot.

Step 5

Stir in the milk and heavy cream. Heat the soup over low heat, stirring occasionally, for about 5 minutes.

Step 6

Gradually add the shredded cheddar cheese, whisking constantly to avoid clumping. Season with salt and pepper to taste.

Step 7

Serve the soup hot in bowls. Top with crumbled bacon, chopped green onions, and extra cheddar cheese, if desired. Enjoy!
