Ingredients

  • 1 cup Flaxseeds
  • 0.5 cup Chia seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Pumpkin seeds
  • 1 medium, grated Carrot
  • 1 medium, grated Zucchini
  • 1 clove, minced Garlic
  • 2 tablespoons Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Sea salt
  • 1.5 cups Water

Directions

Step 1

In a large bowl, combine the flaxseeds and chia seeds with 1.5 cups of water. Stir to mix well and let sit for 15 minutes to form a gel-like consistency.

Step 2

While the seeds are soaking, prepare the vegetables by grating the carrot and zucchini, and mincing the garlic.

Step 3

In a food processor, combine the soaked seeds (including the water), grated carrot, grated zucchini, minced garlic, sunflower seeds, pumpkin seeds, nutritional yeast, lemon juice, ground cumin, and sea salt.

Step 4

Pulse the mixture until it forms a coarse, well-combined dough. Scrape down the sides of the food processor as needed to ensure even mixing.

Step 5

Line dehydrator trays with non-stick sheets or parchment paper. Spread the mixture evenly over the trays, about 1/8 to 1/4 inch thick. Use a spatula or your hands to shape the dough into a rectangular or square shape.

Step 6

Score the dough lightly with a knife to create the desired cracker sizes. This will make it easier to break into uniform pieces once dehydrated.

Step 7

Dehydrate the crackers at 115°F (45°C) for 8-10 hours, flipping them halfway through and removing the non-stick sheet or parchment paper to ensure even drying.

Step 8

When the crackers are completely dry and crisp, remove them from the dehydrator. Break along the scored lines into individual crackers.

Step 9

Store the crackers in an airtight container at room temperature for up to 2 weeks.
