Ingredients

  • 12 pieces Rice paper wrappers
  • 12 pieces Cooked shrimp (peeled and deveined)
  • 1 medium Carrot (julienned)
  • 1 medium Cucumber (julienned)
  • 100 grams Cooked rice vermicelli noodles
  • 12 leaves Fresh mint leaves
  • 12 leaves Fresh cilantro leaves
  • 6 pieces Lettuce leaves (trimmed to fit wrappers)
  • 2 tablespoons Soy sauce
  • 3 tablespoons Peanut butter (creamy)
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 2 tablespoons Water
  • 2 tablespoons Crushed peanuts (for garnish, optional)

Directions

Step 1

Prepare all your vegetables by julienning the carrot and cucumber into thin strips, and wash and dry the fresh mint, cilantro, and lettuce leaves.

Step 2

Cook the rice vermicelli noodles according to the package instructions, then drain and rinse them with cold water to stop cooking. Set aside.

Step 3

Fill a large shallow dish or pie plate with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it softens. Lay the softened wrapper flat on a clean surface.

Step 4

Place a piece of lettuce in the center of the wrapper, leaving about an inch of space on each side. Add a small handful of rice vermicelli, julienned carrots, and cucumber on top of the lettuce.

Lay a piece of shrimp on top of the vegetables and add a mint leaf and a cilantro leaf for added flavor.

Fold the sides of the rice paper wrapper inward, over the filling. Then roll the wrapper tightly from the bottom to the top, enclosing the filling completely. Repeat with the remaining wrappers and ingredients.

To make the peanut dipping sauce, whisk together peanut butter, soy sauce, rice vinegar, honey, and water in a small bowl until smooth. Adjust the consistency with a bit more water if necessary.

Step 8

Arrange the spring rolls on a platter and serve them immediately with the peanut dipping sauce on the side. Optionally, garnish the sauce with crushed peanuts for extra texture.
