Ingredients

  • 1 small head Green cabbage
  • 2 medium Carrot
  • 1 medium Red bell pepper
  • 1 small White onion
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 3 tablespoons White vinegar
  • 4 tablespoons Water
  • 1 teaspoon Paprika
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves of the cabbage and rinse under cool water. Slice the cabbage in half, remove the core, and finely shred the cabbage using a sharp knife, mandoline, or food processor. Place the shredded cabbage into a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or food processor. Add the grated carrots to the bowl with the cabbage.

Step 3

Rinse and core the red bell pepper. Slice it into thin strips and add it to the bowl.

Step 4

Peel and thinly slice the onion into half-moons. Add the onion slices to the bowl.

Step 5

Sprinkle the salt over the vegetables and toss everything together gently. Let the mixture sit for 10 minutes to allow the vegetables to release some of their juices.

Step 6

In a small bowl, combine the sugar, white vinegar, water, paprika, and black pepper. Whisk until the sugar is completely dissolved.

Step 7

Pour the dressing over the vegetables and toss until everything is evenly coated. Taste and adjust seasoning with more salt or vinegar if necessary.

Step 8

Transfer the coleslaw to a serving dish and let it marinate in the refrigerator for at least 30 minutes before serving to allow the flavors to blend. For best results, marinate for 2-3 hours.

Step 9

Serve chilled as a side dish or as a topping for sandwiches and meat dishes.
