Ingredients

  • 4 large Russet potatoes
  • 1 medium, diced Yellow onion
  • 1 medium, diced Red bell pepper
  • 2 teaspoons Smoked paprika
  • 3 minced Garlic cloves
  • 4 tablespoons Olive oil
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Ground cumin

Directions

Step 1

1. Wash and peel the potatoes, then cut them into 1-inch cubes. Place the cubed potatoes in a large bowl of cold water to prevent them from browning.

Step 2

2. Heat 2 tablespoons of olive oil in a large skillet or heavy-bottomed frying pan over medium heat.

Step 3

3. Drain and pat the potatoes dry with a clean kitchen towel or paper towel. Add the potatoes to the pan and cook, stirring occasionally, for 10-12 minutes, until the edges start to brown.

Step 4

4. Push the potatoes to one side of the skillet and add the remaining 2 tablespoons of olive oil to the empty space. Add the diced onion, bell pepper, and a pinch of salt to the skillet. Sauté the vegetables for 5-7 minutes, or until the onion turns translucent.

Step 5

5. Stir the potatoes together with the sautéed vegetables and sprinkle in the smoked paprika, minced garlic, ground cumin, salt, and black pepper. Toss well to coat the potatoes evenly with the spices.

Step 6

6. Cover the skillet with a lid and reduce the heat to medium-low. Allow the potatoes to cook for another 10-12 minutes, stirring occasionally, until they are tender and golden brown.

Step 7

7. Remove the skillet from the heat and sprinkle the chopped fresh parsley over the potatoes for a burst of fresh flavor.

Step 8

8. Serve hot as a comforting side dish or a satisfying vegetarian main course. Enjoy your Gypsy Potatoes!
