Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 1 small Red onion
  • 2 teaspoons Caraway seeds
  • 0.75 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Remove the outer leaves of the cabbage and rinse it under cold water. Cut the cabbage in half, remove the core, and thinly slice the leaves into shreds. Alternatively, use a mandoline or food processor with a shredding attachment for uniform slices.

Peel and grate the carrots using a box grater, or use a food processor to shred them. Set aside.
