Ingredients

  • 1 lb Ground beef (80/20 lean-to-fat ratio)
  • 0.5 lb Ground pork
  • 0.5 cup Breadcrumbs
  • 0.25 cup Milk
  • 1 large Egg
  • 3 Garlic cloves, minced
  • 0.25 cup Sun-dried tomatoes, finely chopped
  • 0.25 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley, finely chopped
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil
  • 1 cup Marinara sauce
  • 0.5 cup Shredded mozzarella cheese

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with non-stick spray.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to soak up the milk.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, egg, minced garlic, sun-dried tomatoes, Parmesan cheese, parsley, oregano, salt, and black pepper. Mix gently with your hands or a spoon until all ingredients are evenly distributed. Be careful not to overmix as this can make the meatloaves dense.

Step 4

Divide the meat mixture into four equal portions and shape each into a small oval-shaped loaf. Place the meatloaves onto the prepared baking sheet.

Brush the tops of each meatloaf with olive oil to promote browning and prevent drying out.

Bake the meatloaves in the preheated oven for 20 minutes.

Remove the meatloaves from the oven and spoon 2 tablespoons of marinara sauce over the top of each loaf. Sprinkle shredded mozzarella cheese over the marinara sauce.

Return the meatloaves to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the internal temperature of the meatloaves reaches 160°F (71°C).

Step 9

Let the meatloaves rest for 5 minutes before serving. Serve with additional marinara sauce on the side if desired.
