  • 1 medium onion, finely diced
  • 1 medium carrot, finely diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 0.5 cup beef or vegetable stock
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon paprika (for topping, optional)

Directions

Step 1

Peel and cut the potatoes into chunks. Bring a large pot of salted water to boil, add the potatoes, and cook until fork-tender (about 15–20 minutes).

Step 2

Drain the potatoes, return them to the pot, and mash them with butter, milk, salt, and black pepper until smooth. Set aside.

Step 3

Preheat the oven to 375°F (190°C).

Step 4

In a large skillet, heat the olive oil over medium heat. Add the ground lamb or beef and cook until browned, breaking it up with a wooden spoon (about 5–7 minutes). Drain excess grease if necessary.

Add the diced onion and carrot to the skillet and cook until softened, about 5 minutes.

Stir in the tomato paste, beef or vegetable stock, Worcestershire sauce, thyme, and frozen peas. Simmer for 5 minutes, allowing the flavors to meld and the mixture to slightly thicken. Remove from heat.
