  • 2 sheets refrigerated pie crusts
  • 1 cup sliced corned beef
  • 0.75 cup sauerkraut
  • 1 cup shredded Swiss cheese
  • 0.33 cup Thousand Island dressing
  • 1 egg
  • 1 tablespoon water

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

On a lightly floured surface, roll out the refrigerated pie crusts and cut out 16 circles using a 4-inch round biscuit cutter (or the rim of a glass).

Step 3

In a medium mixing bowl, combine the chopped corned beef, sauerkraut (squeeze out excess liquid), shredded Swiss cheese, and Thousand Island dressing. Mix until evenly combined.

Step 4

Place about 1 to 1.5 tablespoons of the filling mixture in the center of 8 dough circles.

Step 5

Lightly beat the egg with 1 tablespoon of water to make an egg wash. Brush the edges of the dough circles with the egg wash.

Top each filled dough circle with another dough circle. Press the edges together, then crimp with a fork to seal each pie securely.
