  • 12 slices Mini rye bread slices
  • 6 ounces Thinly sliced corned beef
  • 1 cup Sauerkraut, drained and patted dry
  • 1 cup Shredded Swiss cheese
  • 0.5 cup Thousand Island dressing
  • 2 tablespoons Butter, melted
  • 0.5 teaspoon Caraway seeds (optional)
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a standard muffin tin with cooking spray.

Step 2

Using a rolling pin, lightly flatten each slice of mini rye bread to make them pliable. Brush one side of each slice with melted butter.

Step 3

Press each slice of bread, buttered side down, into the wells of the muffin tin to create small bread cups.

In a small bowl, mix the drained sauerkraut and Thousand Island dressing until well combined.
