Ingredients

  • 2 sheets Puff pastry sheets
  • 250 grams Button mushrooms
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 2 small Shallots (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Thyme (fresh, chopped)
  • 30 grams Parmesan cheese (grated)
  • 60 grams Cream cheese (softened)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 large Egg (beaten, for egg wash)
  • 1 tablespoon Parsley (fresh, chopped for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Allow the puff pastry sheets to thaw slightly on a clean surface, then cut each sheet into 6 equal squares, making a total of 12 pieces.

Step 3

In a skillet, melt the butter and olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until softened.

Step 4

Add the minced garlic to the skillet and sauté for 30 seconds until fragrant.

Step 5

Finely chop the button mushrooms and add them to the skillet. Cook for 5-7 minutes until the mushrooms are tender and any liquid has evaporated.

Step 6

Stir in the thyme, salt, and black pepper. Remove the skillet from heat and let the mixture cool slightly.

Step 7

In a mixing bowl, combine the cooked mushroom mixture, grated Parmesan cheese, and softened cream cheese. Stir until fully combined.

Step 8

Place the puff pastry squares onto the prepared baking tray. Using a knife, score a border about 1 cm from the edges of each square (do not cut all the way through). This will help the edges puff up while baking.

Step 9

Spoon a small amount of the mushroom mixture into the center of each square, spreading it evenly within the scored border.

Step 10

Brush the edges of each tart with the beaten egg to ensure a golden, glossy finish.

Step 11

Bake the tarts in the preheated oven for 15-18 minutes, or until the puff pastry is golden and flaky.

Step 12

Remove the tarts from the oven and let them cool slightly. Garnish with chopped parsley before serving. Enjoy warm or at room temperature!
