Ingredients

  • 12 pieces Spring roll wrappers
  • 50 grams Vermicelli rice noodles
  • 1 cup Cabbage, finely shredded
  • 1 medium Carrot, julienned
  • 1 cup Bean sprouts
  • 2 stalks Green onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 cup Vegetable oil (for pan-frying)
  • 1 serving Cornstarch slurry (1 tsp cornstarch mixed with 2 tsp water)

Directions

Step 1

Soak the vermicelli rice noodles in hot water for 5 minutes, or until softened. Drain and chop into shorter lengths for easier wrapping.

Step 2

In a large bowl, combine the shredded cabbage, julienned carrot, bean sprouts, chopped green onions, softened vermicelli noodles, minced garlic, and grated ginger. Mix well.

Step 3

Drizzle soy sauce and sesame oil over the vegetable and noodle mixture. Toss to evenly combine.

To assemble the spring rolls, place a wrapper on a clean working surface in a diamond orientation (one corner towards you). Add about 2 tablespoons of filling near the bottom corner of the wrapper.
