  • 0.5 cup Breadcrumbs
  • 0.25 cup Milk
  • 1 large Egg
  • 2 tablespoons Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 ounces (cut into small cubes) Cheddar cheese
  • 0.25 cup (for topping) BBQ sauce or ketchup
  • 1 tablespoon (chopped, optional for garnish) Fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with cooking spray or oil.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, diced onion, minced garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix gently until just combined; avoid overmixing to keep the meatloafs tender.

Step 3

Divide the meat mixture into 6 equal portions. Take one portion and flatten it slightly in your hand. Place a piece of cheddar cheese in the center and fold the meat around it to completely encase the cheese. Shape into a small loaf and place it in a muffin cavity of the prepared tin. Repeat with the remaining meat mixture and cheese cubes.

Step 4

Brush the tops of each meatloaf with BBQ sauce or ketchup for added flavor and a glossy finish.

Bake in the preheated oven for 20–25 minutes, or until the internal temperature of the meatloafs reaches 160°F (70°C).
