Ingredients

  • 2.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1 cup canola oil (or vegetable oil)
  • 0.5 cup unsweetened applesauce
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 cups grated carrots (about 3–4 medium carrots)
  • 1 cup chopped walnuts or pecans (optional)
  • 8 ounces cream cheese (softened)
  • 0.5 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1.5 teaspoons pure vanilla extract (for frosting)
  • 2 tablespoons milk (if needed to thin frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3

In a separate medium bowl, whisk together the oil, applesauce, eggs, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix. Fold in the grated carrots and chopped nuts (if using).

Step 5

Divide the batter evenly between the prepared cake pans and smooth out the tops using a spatula.

Step 6

Bake in the preheated oven for 35–40 minutes, or until a toothpick inserted in the center of the cakes comes out clean.

Step 7

Let the cakes cool in their pans for 10 minutes. Then, carefully remove the cakes from the pans and transfer them to a wire rack to cool completely.

Step 8

To make the frosting, beat the softened cream cheese and butter together in a medium mixing bowl using an electric hand mixer, until creamy and smooth.

Step 9

Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition. Stir in the vanilla extract and add milk, 1 tablespoon at a time, if needed to achieve your desired frosting consistency.

Step 10

Once the cake layers are completely cool, place one layer on a serving plate or cake stand. Spread an even layer of cream cheese frosting on top.

Step 11

Place the second cake layer on top and spread the remaining frosting evenly over the top and sides of the cake.

Step 12

Decorate as desired with additional whole or chopped nuts, or cute bunny-themed decorations to match the 'Little Bunny Foo Foo' theme.

Step 13

Slice and serve! Enjoy your moist and flavorful carrot cake with creamy frosting.
