1. To prepare the dough for litti, in a bowl, mix whole wheat flour with a pinch of salt and 2 tablespoons of ghee.
2. Gradually add water to the flour and knead it into a soft, pliable dough. Cover and set aside for 20 minutes.
3. For the sattu stuffing, in another bowl, combine sattu, ajwain, 0.5 teaspoon of salt, 1 tablespoon of mustard oil, finely chopped ginger, garlic, green chilies, lemon juice, and coriander leaves. Mix well.
4. Divide the dough into small balls. Flatten each ball slightly and place a portion of the sattu mixture in the center.
5. Gently bring the edges together to encase the filling, ensuring no gaps, and shape it into a smooth ball.
6. Preheat the oven to 200°C (390°F). Line a baking sheet with parchment paper.
7. Arrange the stuffed litti on the baking sheet and brush with ghee.

10. Boil the potatoes until tender, then peel and mash them in a bowl.
11. In a mixing bowl, combine the mashed potatoes, roasted and peeled aubergine and tomatoes, chopped onion, turmeric powder, red chili powder, 1 tablespoon mustard oil, and salt.
12. Mix all the ingredients until well incorporated, then adjust salt and spices as needed.
13. Serve the litti hot, drizzled with ghee, alongside the chokha for a delicious traditional meal.
