Ingredients

  • 2 cups Broccoli florets
  • 1 large Carrot, thinly sliced
  • 1 medium Red bell pepper, sliced into strips
  • 1 cup Snow peas
  • 1 cup Mushrooms, sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Soy sauce (low-sodium)
  • 1 tablespoon Sesame oil
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Cornstarch
  • 3 tablespoons Water
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Prepare all vegetables: cut broccoli into small florets, slice the carrot thinly, cut the red bell pepper into strips, trim and clean snow peas, and slice the mushrooms.

Step 2

In a small bowl, mix the soy sauce, sesame oil, water, and cornstarch. Stir to combine and set aside.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the minced garlic and grated ginger to the hot oil and stir fry for 30 seconds until fragrant, being careful not to burn them.

Step 5

Toss in the broccoli, carrots, and red bell pepper. Stir fry for 3-4 minutes, stirring frequently.

Step 6

Add the snow peas and mushrooms to the pan. Continue to stir fry for another 3 minutes until the vegetables are tender-crisp.

Step 7

Pour the prepared soy sauce mixture over the vegetables. Stir well to coat all the ingredients and allow the sauce to thicken slightly, cooking for 1-2 minutes.

Step 8

Remove the stir fry from heat and sprinkle with sesame seeds if desired.

Step 9

Serve immediately as a side dish or over rice or noodles for a complete meal.
