Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Low-sodium chicken broth
  • 8 ounces Reduced-fat cream cheese (softened)
  • 1 packet Dry ranch seasoning mix
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 cups Fresh baby spinach (optional)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Place the chicken breasts in the bottom of your Crock Pot.

Step 2

Pour the chicken broth over the chicken breasts.

Step 3

Sprinkle the dry ranch seasoning mix, garlic powder, onion powder, salt, and black pepper evenly over the chicken.

Step 4

Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is fully cooked and tender.

Step 5

Once the chicken is cooked, remove it from the Crock Pot and shred it using two forks. Set aside.

Step 6

Add the softened cream cheese to the Crock Pot and whisk it into the remaining broth until smooth and creamy.

Step 7

In a small bowl, mix the cornstarch with water to make a slurry. Stir this slurry into the cream cheese mixture to thicken the sauce. Allow it to cook for 10-15 minutes on high, stirring occasionally.

Step 8

Optional: Stir in the fresh baby spinach and allow it to wilt for a few minutes.

Step 9

Return the shredded chicken to the Crock Pot and mix it into the sauce until evenly coated.

Step 10

Serve hot over rice, pasta, or alongside steamed vegetables for a complete meal.
