Ingredients

  • 12 sheets Low-fat graham crackers
  • 2 packages Sugar-free instant vanilla pudding mix
  • 3 cups Skim milk
  • 8 ounces Cool Whip Light (whipped topping, thawed)
  • 1 cup Sugar-free chocolate frosting

Directions

Step 1

In a large mixing bowl, combine the sugar-free instant vanilla pudding mix and skim milk. Whisk thoroughly for 2-3 minutes until the mixture is smooth and starts to thicken.

Step 2

Fold the thawed Cool Whip Light into the pudding mixture gently until fully combined. Set aside.

Step 3

In a 9x13-inch baking dish, arrange a layer of the graham crackers, breaking them as needed to fit the pan snugly.

Step 4

Spread half of the pudding mixture evenly over the graham cracker layer using a spatula.

Step 5

Add another layer of graham crackers on top of the pudding mixture. Spread the remaining half of the pudding mixture over this second layer of graham crackers.

Step 6

For the final layer, arrange one last layer of graham crackers on top of the second pudding layer.

Step 7

Microwave the sugar-free chocolate frosting for 10-15 seconds, or just until it softens and becomes spreadable (do not let it melt completely). Stir well.

Step 8

Carefully spread the warmed chocolate frosting over the top layer of graham crackers, covering the dessert completely.

Step 9

Refrigerate the dessert for at least 4 hours, preferably overnight, to allow the graham crackers to soften and for the layers to set.

Step 10

Slice into 12 portions and serve chilled. Enjoy your Lite Chocolate Eclair Dessert!
