Ingredients

  • 5 cups Fresh strawberries
  • 2 cups 100% apple juice (unsweetened)
  • 3 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt
  • 1 piece Pre-baked 9-inch pie crust
  • 1 cup Whipped cream (optional, for serving)

Directions

Step 1

Wash the strawberries thoroughly and hull them (remove the green tops). Slice 4 cups of strawberries into quarters and leave the remaining 1 cup of strawberries whole for decoration.

Step 2

In a medium saucepan, combine 1 1/2 cups of apple juice and 3 tablespoons of cornstarch. Whisk until there are no lumps, then add the salt.

Step 3

Place the saucepan over medium heat and cook, stirring constantly, until the mixture starts to bubble and thickens into a glaze. This should take about 5–7 minutes.

Step 4

Remove the saucepan from heat, and stir in the vanilla extract. Let the glaze cool slightly for 5 minutes.

Step 5

Add the quartered strawberries to the glaze and mix gently until all the strawberries are evenly coated.

Step 6

Spoon the strawberry mixture into the pre-baked pie crust and spread it out evenly. Arrange the whole strawberries decoratively on top of the filling.

Step 7

Chill the pie in the refrigerator for at least 2 hours, or until the filling is fully set.

Step 8

Serve the pie cold with a dollop of whipped cream on top if desired.
