Ingredients

  • 6 pieces bone-in, skin-on chicken thighs
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 0.5 cup all-purpose flour
  • 3 tablespoons vegetable oil
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic cloves, minced
  • 2 cups chicken broth
  • 0.25 cup heavy cream
  • 2 sprigs fresh thyme sprigs
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt, black pepper, garlic powder, onion powder, and paprika. Make sure to coat all sides evenly.

Step 2

Dredge the chicken thighs in the all-purpose flour, shaking off any excess, and set aside.

Step 3

Heat a large skillet or Dutch oven over medium-high heat and add the vegetable oil.

Step 4

Once the oil is hot, add the chicken thighs skin side down. Sear them for 4-5 minutes on each side until golden brown. Remove the chicken and set it aside. (Chicken will not be fully cooked yet.)

Step 5

Reduce heat to medium and add the sliced onions to the skillet. Sauté for 6-8 minutes, stirring occasionally, until they’re softened and slightly caramelized.

Step 6

Add the minced garlic to the onions and cook for another 1-2 minutes until fragrant.

Step 7

Sprinkle 2 tablespoons of the dredging flour into the skillet and stir well to coat the onions, cooking for 1-2 minutes to eliminate the raw flour taste.

Step 8

Slowly whisk in the chicken broth, ensuring no lumps form. Bring the mixture to a gentle simmer and stir constantly until the gravy thickens slightly.

Step 9

Stir in the heavy cream and add the fresh thyme sprigs. Taste the gravy and adjust seasoning with the remaining 0.5 teaspoon of salt if needed.

Step 10

Return the chicken thighs to the skillet, nestling them into the onion gravy. Reduce heat to low, cover with a lid, and simmer for 25-30 minutes until the chicken is fully cooked (internal temperature of 165°F/74°C).

Step 11

Remove the thyme sprigs before serving. Garnish with freshly chopped parsley, if desired.

Step 12

Serve hot with mashed potatoes, rice, or your favorite side dish.
