Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 10.5 ounces cream of mushroom soup
  • 10.5 ounces cream of chicken soup
  • 0.5 cup whole milk
  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 2 cups shredded cheddar cheese
  • 32 ounces frozen tater tots
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish and set it aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and cooked through, breaking it into crumbles with a spatula. Drain any excess grease.

Step 3

Add the chopped onion and minced garlic to the skillet with the beef, and cook for 3-4 minutes until softened and fragrant.

Step 4

Stir in the cream of mushroom soup, cream of chicken soup, and milk, mixing well. Season the mixture with salt and black pepper.

Step 5

Add the frozen mixed vegetables to the skillet and stir to combine. Let the mixture simmer for 2-3 minutes.

Step 6

Spread the beef and vegetable mixture evenly into the prepared casserole dish.

Step 7

Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.

Step 8

Arrange the frozen tater tots in a single layer on top of the cheese, covering the entire surface of the casserole.

Step 9

Sprinkle the remaining 1 cup of shredded cheddar cheese on top of the tater tots.

Step 10

Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crispy and the casserole is bubbling around the edges.

Step 11

If desired, sprinkle paprika over the top for a pop of color before serving.

Step 12

Let the casserole cool for 5 minutes before serving. Enjoy!
