Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 2 tablespoons white vinegar
  • 1.5 tablespoons granulated sugar
  • 1 tablespoon yellow mustard
  • 2 celery stalks, diced
  • 0.5 red bell pepper, diced
  • 0.25 cup red onion, finely minced
  • 2 hard-boiled eggs, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (optional, for garnish)

Directions

Step 1

Cook the elbow macaroni according to the package instructions until al dente. Drain the pasta, rinse it under cold water to cool it down, and set aside to drain completely.

Step 2

In a large mixing bowl, whisk together the mayonnaise, sour cream, white vinegar, granulated sugar, yellow mustard, salt, and black pepper until smooth and well combined.

Step 3

Fold the diced celery, red bell pepper, minced red onion, and chopped hard-boiled eggs into the dressing mixture.

Step 4

Add the cooled macaroni to the bowl with the dressing and vegetables. Gently toss until the macaroni is evenly coated with the dressing.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the salad to chill completely.

Step 6

Before serving, taste and adjust the seasoning with additional salt or pepper if needed. Garnish with a sprinkle of paprika, if desired.

Step 7

Serve as a side dish or enjoy on its own. Store leftovers in the refrigerator for up to 3 days.
