  • 6 medium russet potatoes
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion

  • 6 cups chicken broth
  • 1 cup heavy cream
  • 6 slices bacon
  • 1 cup (shredded) cheddar cheese

  • 3 stalks (sliced, for garnish) green onions

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Set aside.

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and place it on a paper towel-lined plate. Reserve 2 tablespoons of the bacon grease in the pot and discard the rest.
