Ingredients

  • 4 cups broccoli florets
  • 3 cups fresh spinach
  • 2 cups shredded cheddar cheese

  • 1 cup sour cream

  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon olive oil
  • 0.5 cup breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.

Step 2

Bring a large pot of water to a boil and blanch the broccoli florets for 2-3 minutes. Remove and immediately plunge into an ice water bath to halt cooking, then drain.

Step 3

In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the spinach and sauté until wilted, about 2-3 minutes. Set aside.
