Ingredients

  • 4 medium Beets
  • 1 small head Cabbage
  • 2 medium Carrots
  • 4 medium Potatoes
  • 1 large Yellow onion
  • 3 large Garlic cloves
  • 8 cups Vegetable broth
  • 3 tablespoons Tomato paste
  • 2 tablespoons White vinegar
  • 2 tablespoons Dill
  • 2 whole Bay leaves
  • 1 teaspoon Sugar
  • 2 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Sunflower oil
  • 0.5 cups Sour cream
  • 2 tablespoons (optional) Fresh dill for garnish

Directions

Step 1

Wash and peel the beets, carrots, potatoes, and onion. Finely shred the beets and carrots, and dice the potatoes into bite-sized cubes. Thinly slice the cabbage. Finely chop the onion and garlic.

Step 2

In a large pot, heat the sunflower oil over medium heat. Add the onion and sauté for 3-4 minutes, until translucent. Stir in the garlic and cook for an additional 1 minute.

Step 3

Add the shredded beets and carrots to the pot and cook for 5 minutes, stirring frequently. Stir in the tomato paste and cook for another 2-3 minutes to develop the flavors.

Step 4

Pour in the vegetable broth and add the cubed potatoes, sliced cabbage, bay leaves, salt, black pepper, and sugar. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, or until the potatoes and cabbage are tender.

Step 5

Stir in the white vinegar and fresh dill (reserve some dill for garnish if desired). Taste and adjust the seasoning with more salt, pepper, or sugar as needed.

Step 6

Remove the bay leaves before serving. Ladle the borscht into bowls and top each serving with a dollop of sour cream and a sprinkle of fresh dill, if using.
