  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 2 tablespoons Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Cayenne pepper (optional, for heat)
  • 2 tablespoons Tomato paste
  • 14 ounces Diced tomatoes (canned, with juice)
  • 15 ounces Kidney beans (canned, drained and rinsed)
  • 15 ounces Black beans (canned, drained and rinsed)
  • 1 cup Beef broth
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 0.5 cup Shredded cheddar cheese (for garnish)
  • 0.25 cup Sour cream (for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add olive oil and allow to warm up for 1 minute.

Step 2

Add the diced onion and cook for 3-4 minutes until softened and translucent. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2 minutes.

Step 3

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until fully browned, about 5-7 minutes. Drain any excess fat if necessary.

Step 4

Stir in the chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using). Let the spices toast for 1 minute, stirring continuously.

Step 5

Add the tomato paste to the pot and mix well to coat the ingredients. Cook for 2 minutes to deepen the flavor.

Step 6

Pour in the diced tomatoes (including their juice) and beef broth. Bring the mixture to a simmer over medium heat, stirring occasionally.

Step 7

Add the kidney beans and black beans, stirring to combine. Lower the heat to a gentle simmer and cover the pot with a lid.

Step 8

Simmer the chili for 30 minutes, stirring occasionally to prevent sticking. Taste and adjust seasoning if necessary.

Step 9

Serve the chili hot in bowls, garnished with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream.
