Ingredients

  • 2 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 4 medium Carrots
  • 3 stalks Celery stalks
  • 3 large Russet potatoes
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Thyme
  • 1 Bay leaf
  • 2 tablespoons Flour
  • 2 tablespoons Water
  • 2 tablespoons Parsley

Directions

Step 1

Cut the beef chuck into bite-sized cubes and season with salt and black pepper.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

Sear the beef cubes in batches until browned on all sides, about 5-6 minutes per batch. Remove the beef from the pot and set aside.

Step 4

Dice the onion and mince the garlic. Add them to the same pot and sauté for 3-4 minutes until softened and fragrant.

Step 5

Peel and slice the carrots, slice the celery, and peel and cube the potatoes. Set aside.

Step 6

Stir the tomato paste into the pot with onions and garlic, cooking for another 1-2 minutes to concentrate its flavor.

Step 7

Pour in the beef broth and Worcestershire sauce, then scrape the bottom of the pot to deglaze and release any browned bits.

Step 8

Return the seared beef to the pot and add the thyme, bay leaf, carrots, celery, and potatoes.

Step 9

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 90 minutes, stirring occasionally.

Step 10

In a small bowl, mix the flour with water to create a slurry. Stir it into the stew to thicken the broth.

Step 11

Simmer the stew uncovered for an additional 10 minutes, then taste and adjust seasoning with more salt or pepper if needed.

Step 12

Remove the bay leaf and garnish the stew with chopped parsley before serving.
