Ingredients

  • 2 cups All-purpose flour
  • 1 cup Ground almonds
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 1 cup Unsalted butter, cold and cubed
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 unit Egg yolk
  • 0.75 cup Raspberry jam
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x9-inch square baking pan with parchment paper, leaving overhang on the sides for easy removal.

Step 2

In a large mixing bowl, combine the flour, ground almonds, granulated sugar, brown sugar, cinnamon, and salt. Mix until evenly distributed.

Add the cold cubed butter into the dry ingredients. Use a pastry cutter or your fingers to work the butter into the dry mixture until it resembles coarse crumbs.

Add the egg yolk and mix gently until the dough comes together. It will be slightly crumbly but should hold when squeezed gently in your hand.
